This is a Kiritsuke (Multipurpose) knife. It is made not only stainless steels and ceramics, but also Shiroko (White steel #2). It is made of Japanese swords (Samurai Katana) technique for a long time, then it feature tough and sharpness. Kiritsuke has mainly been used in the Kanto region of Japan. Many use it in lieu of both Yanagiba and Usuba. While it is used as a general purpose knife, due to its straight edge it is also suitable to precisely cut a type of food used in some Japanese sweets called "nagasimono, yosemono", which is made of kanten or gelatin cured in a mold normally containing fruits or beans.
