The front surface is free of knots, while the back may feature small natural knots (refer to sample picture). Material: Made from "Yoshino" Hinoki wood from Yoshino, Nara, Japan.One-piece solid timber, not jointed board.The boards undergo natural drying until their water content drops below 20%, with the target range being 15 to 18%. Wood with lower moisture content helps prevent warping, cracking, and bacterial growth. Hinoki has a distinctive aroma, and the scent of Hinoki is favored by many people, used in products such as Hinoki baths and Hinoki sake vessels. Size:Dimensions: 500 x 350 x 30 (19 11/16" x 13 3/4" x 1 3/16") Blade Friendliness:Hinoki wood possesses a moderate softness and excellent edge retention, making it an ideal match for Hagane (Japanese carbon steel) blades. It is commonly favored for cutting boards in sushi restaurants. Sanitation:Hand-planed for water-repellent end grain, yielding a silky-smooth surface with a natural sheen. Hinoki cypress contains α-casinol and Hinokiol (not to be confused with Hinokitiol), which possess antibacterial properties, making it resistant to bacteria and mold growth.
